Vegan All Day Breakfast Extravaganza!

After 4 Crossfit workouts this weekend, I am starving for food!!! John also had a crazy downhill mountain bike ride yesterday (non-stop for 7 trails = approx. 4 hours). After our Sunday morning workout, we decided to make a giant, satisfying breakfast smorgasbord:
- Vegan All Day Breakfast
- Stack of Sourdough Blueberry Pancakes
- All Day Breakfast Beer from Carbon Brews
Our vegan All Day Breakfast included young peashoot leaves (it is in season in HK!), baked beans, caramelized onions and portobello mushrooms (cook for at least 30min on low heat), scrambled tofu, sourdough bread with roasted tomatoes, garlic and homegrown basil, and last but not least, the Ikea plant based "hotdogs".
The trick for the best scrambled tofu is to use Kalak Namak (black salt) and to cook it down with not much liquid left. I used this recipe: https://lovingitvegan.com/vegan-tofu-scramble/ but also added white miso paste. Kalak Namak, nutritional yeast and the white miso paste give the eggy flavor. You can buy the kalak namak in any Indian shop.
Sourdough blueberry pancakes are super easy. As long as you have sourdough starter at home, you can use the discarded portion to give the pancakes the sour yet tangy taste.
