Gingerbread Cookies!

Merry Christmas and Happy Festivus to everyone!


I wanted to make gingerbread men for the longest time, but never did. John got me the gingerbread man cookie cutter as one of the Christmas gifts, and I couldn't wait to use it.


These cookies are dairy free and oil free. It can be gluten free too if using gluten free flour instead of all purpose flour at 1 to 1 ratio. The texture of the cookies are crispy on the outside but chewy on the inside. To me, this is the perfect texture!


Ingredients:

- Ground flaxseeds (or flax meal)

- Coconut sugar (or brown sugar)

- All purpose flour (or gluten free flour)

- Molasses

- Almond butter (DO NOT substitute with peanut butter)

- Applesauce (or oil)

- Ginger powder

- Cinnamon powder

- Nutmeg

- Baking soda

- Salt


This recipe only requires one mixing bowl (yay, less washing!). Once the dough is mixed, the dough needs to be in the fridge at least one hour before it can be roll out. Applesauce is used in this recipe instead of oil. If applesauce is not available, oil can be used with the same measurement.


I brought these cookies to our little gathering, and the cookies were a big success!

Adaptation: all purpose flour, and I added more cinnamon and ginger powder that what it called for, and also added a pinch of cardamom and cloves powder.
