Sandwich, anyone?

It had been a long time since we have sandwich at home as a meal.
I searched the fridge, and found a couple packages of tempeh. So I decided to make sourdough bread and used it to make tempeh avocado sandwiches. If you do not have sourdough starter to make sourdough bread, just buy a loaf of whole wheat bread or sourdough bread. If making homemade sourdough bread, make sure the bread is finished baking and rest for at least 6 hours. This will prevent the gumminess.
Tempeh is made by fermented soybeans in a cake form. Through the natural fermentation process, the whole soybeans would retain a higher content of protein, nutrients and vitamins than tofu per serving. Tempeh also contains probiotics, which helps on the digestive system and reduce inflammation. It is easily accessible in Hong Kong. Most Indonesian/Thai shops sell it, and to top it off, it is cheap! The price ranges from HK$9 to HK$11 per package.
For the tempeh, I cut into 8 to 10 thin slices of each pack, about 1cm per slice. Pan fry with oil on a pan until they are brown or a bit blackened on each side. Pour the sauce into the pan, and let it cook for 30sec on each side. Tempeh will absorb all the sauce. Take the tempeh slices out, and let them cool off.
Tempeh Sauce for 1 package of tempeh:
- 2 tablespoons of balsamic vinegar (can also use wine vinegar)
- 2 tablespoons of soy sauce or tamari or coconut aminos
- 2 teaspoons of sugar or maple syrup or agave or honey (if you are not vegan)
- 1/2 to 1 teaspoon of sirracha or chili sauce (optional)
I took a couple nice ripe avocados and mashed those together. Squeeze some lime juice and put in salt and pepper. Mix well.
Cut a ripe tomato into thin slices, or use sun-dried tomatoes. Cut the sun-dried tomatoes into small slices/bits.
I have some fresh salad veggies on hand, rinsed and tore them into tiny pieces.
To assemble, just toast the bread slices, and spread the avocado mixture on half slices of the bread. Put the tomato slices or sun-dried tomatoes on top of the avocado spread, and put the fresh veggies on top. Lastly, put the tempeh on top!
You can enjoy it as an open face toast, or put the other half of the bread on top to make it as a sandwich.
This is so easy to make, soooo delicious and satisfying. I hope you all enjoy!
P.S. you can also grill the bread with a bit of vegan butter to make it extra crispy.
