Pecan Pie!

Happy US Thanksgiving! In the past, we always made Pumpkin pie. Since we made pumpkin pie for Canadian Thanksgiving in October, we decided to make the US Southern favorite dessert for Thanksgiving, pecan pie!
If you want to make this pie, it is highly recommended to make it the day before. Recipes are as following:

Adaptation: the recipe is for 2 pie crust. So half the portion if you plan to make one only.
I also use white rum instead of vodka. Suggest to freeze the vegan butter and vegetable shortening in the freezer for 30 minutes.

Adaptation: added 1 tablespoon of dark rum into the filling
If you can find a store bought vegan pie crust, go ahead and use that.
